Fish Sauce

    Decided I was going to try to make my own Pho today. I toasted the spices, charred the onion and ginger under the broiler, and put it all together in a big stock pot with about 4.5 lbs of cut up beef ribs (they're cheaper than oxtails) and around 5 quarts of water. It was smelling pretty good until I open the fish sauce. :eek: Admittedly, I haven't done much Asian cooking, and this is my first go with fish sauce. Then I thought, am I really going to put this stuff in there? I sure hope the anise, onion, and ginger aromas balance it out in the end because, right now, it smells like :eek:!

    yep, it's scary stuff, but it does disappear into the background & make things more interesting. My fave is Red Boat, the stinkiest of them all!

    Fish sauce is great, but it is a bit strong on its own. Once it cooks it adds so much to the dish.

    I just went and looked in the pantry. I use Squid Brand fish sauce. I like to put in soups and rice or greens with Nori Komi Furikake too. Salmon fish head soup with it is great! Use clam broth and fish sauce together also.

    It's tough stuff, but I use a tiny amount, and can tell if it's missing. Don't research how it's made, however.

    Essential for a lot of asian cooking. Go easy and you'll be fine.
    If you're bored -try out belachan blocks and bagoong.

    What a coincidence, I decided to make a batch of pho this week too!

    Don't worry about the fish sauce, it will be great once incorporated in the complete dish. My policy is to never smell the stuff in the bottle, or else I get second thoughts too.

    The way I get people into the idea of Asian fish sauces is to start them out on regular Lea & Perrins Worcestershire sauce, which is basically the Anglo equivalent. Different flavor profiles, but basically the same thing.

    I love fish sauce. I've used many bottles of luckys. My favorite is Red Boat.

    I've imagined making fish sauce with tons and tons of rotting fish on racks and the seeping fish gut rot coming out and pouring over all the other fish guts until it gets down to a collection bucket and then put in bottles for us to eat.

    I love fish sauce. It's amazing we're not dead eating it.

    I love Asian food sometimes, but it's really hard to find a good bowl of ramen without a pork based broth. I hate that stuff. Won't touch it. In fact, many restaurants cannot even tell you for 100% what the broth consists of. Only the high end spots can tell you this...because the chef is in charge and he knows what goes into his own creations.

    How can you hate the best and tastiest food in the world?

    I could eat tonkutsu ramen all day long every day.

    Especially when I am in Japan ....

    Pork broth and pork in general rules! :)

    I'm a wanderer...
    Fermented fish, great savoury note for a sauce, truly repugnant on it's own.

    I have on occasion had to open all the windows and evacuate upon adding it - the fumes can be lethal.
    Best to wait until they dissipate.

    I read the biography of an aussie chopper pilot in Vietnam in the sixties. He used to go out on patrol over the jungle and said he could locate the vietcong camps by the smell of them brewing up fish sauce.

    Not really...but hey, to each his own. I have had some with a vegetarian broth, and a good chef knows just how to flavor it up.

    Fish sauce doesn't even come close in the smell race to lutefisk. That stuff is a chemical weapon :)
